Salami and Goat Cheese Crostini

The spiced bite of Springer's salami paired with tangy goat cheese and fresh herbs makes a delicious and simple appetizer that is perfect for any occasion.

small shallot, minced

fresh herbs (dill, chives, flat leaf parsley, basil)

slices baguette, toasted

slices Springers salami or summer sausage

soft goat cheese (chevre)

In bowl, whisk together oil, lemon juice, vinegar, honey, salt and pepper. Stir in shallots and herbs.

Drizzle half of the vinaigrette over the toasted bread slices, top each with a slice of the salami and spread with goat cheese. Drizzle with remaining vinaigrette and serve immediately.
